We have a lot of obligations and things taking priority over others. One would think we’d put our meals and food in the top 3 (at least those of us who are foodies!), but let’s be honest: it’s still a struggle bus sometimes.
Fear not my friends!
That is why we have these simple 5-ingredient quick dinners for family outings have simple and quick recipes!
Anytime I see the words “fast” and “easy” in a recipe I just have to look! Because, there are plenty out there that will call for 20 minutes of prep time, plus an additional 45 minutes- 2 hours of cook or oven time.
Who HAS that? (I know I don’t…please.)
Sometimes we MAY find ourselves with that time, and that’s great! But, for those days when we need to “pot it and forget it,” you’ve come to the right place.
This particular recipe we will focus on as a dinner entree.
But in the weeks and months to come, I will offer up some tried-and-true fast and easy crockpot recipes with 5 or less ingredients so that you can build up your recipe book with quick go-tos! Who doesn’t want to make easy, healthy recipes for dinner!?
So, let’s get started shall we?
Easy Dinners for a Family: Baked Italian Crockpot Chicken
Whether you are using an Instant Pot on the “crockpot setting” or an old fashioned crockpot, make sure you use it on the low-heat cooking setting for this recipe for best results!
This easy dinners for a family edition recipe comes with 5-ingredients; (minus the optional one) and a simple crockpot is great to have weekly.
Additionally, this is even a good recipe to repurpose the left overs! Check back soon, as there will be a whole blog on recipes that are great for repurposing and how to stretch your groceries!
“Easy Meals to Make” Quick Dinners for Family-Ingredient List
- 8oz chicken breast-(frozen or fresh)
- 1 bag frozen broccoli (used Steamable brand)
- 1/2 bottle Italian Dressing (used Panera Brand)
- 1 clove fresh garlic, diced
- 2oz canned button mushrooms
- Italian seasoning packet, (optional, but definitely adds flavor!)
Part II of Easy Dinners for a Family (stay tuned…)
Step 1: Preheat your crockpot to low-heat setting as you are prepping your ingredients (mostly for if you are using frozen chicken).
Step 2: Dice fresh garlic clove.
Step 3: Pour half of the called-for Italian dressing into the warmed crockpot (save the remaining for the last step*).
Step 4: Place chicken breast into crockpot. (If using fresh, you can sprinkle Italian seasoning packet on breasts before putting into crockpot).
Step 5: Pour in drained mushrooms.
Step 6: Add in diced garlic.
Step 7: *Pour in remaining Italian dressing and spread over all chicken breast.
Optional-if using seasoning packet, you can use a portion of the packet now, to cook and infuse flavors into the chicken. Once done, turn the crockpot to warm and pour in the rest of the seasoning prior to serving.
How to Serve
Cook on low heat for 6-8 hours depending on your particular crockpot. Cook the Steam Fresh broccoli following the directions on the bag. Serve steamed broccoli alongside Italian chicken breast.
